Filip, although he is now the Catering and Restaurant Manager at The Big Cheese Catering Company, is a Chocolatier-Patissier and qualified Chef by training and Belgian by Birth.
He cooked privately for Mikhail Gorbatsjov, the Belgian Royal family, Prince Edward, President Clinton, the late JFK Junior and a whole list of prime ministers, rock stars and A-listers.
Filip was previously at the Hotel Windsor, as director of food and beverage operations. His focus there was in enhancing the dining experiences available at the hotel‘s signature 111 Spring Street Restaurant and ensuring banquets and events in the famous grand ballroom and One Bourke Street, where among the best in Melbourne. He also played a key role in overseeing the long-term direction and $20.000.000 project of the hotel‘s restaurants and bars scheduled transformation during and following a major refurbishment scheduled to begin by mid-2009.
Prior to this, Filip was director of food and beverage at the Sofitel Melbourne on Collins, where he was responsible for the hotel‘s restaurants, bars, catering and events and guiding an overall staff of 240. At the Sofitel he was directly responsible for the daily routine and butler‘s team of Prince Edward, Duke of Wessex and vice patron of the Commonwealth Games, while residing at the hotel in 2006.
Prior to the Sofitel, he held a number of senior positions with other prominent properties including the Four Seasons Hotel Sydney and the Four Seasons Hotel Istanbul, Turkey for a range of restaurants and hotels in England and in his home country of Belgium.
