1 or 2 Medium shallots (brown onions are fine).
1 glove garlic (more if you like lots)
2 tbsp Butter
1 Tbsp Olive oil
2 cups white wine
Dice shallots and garlic into small pieces
Melt butter and olive oil into deep saucepan, when it starts to bubble put in shallots and garlic.
Saute until soft and translucent.
Add in white wine.
Dice tomato to medium pieces and add into the pan.
Cook for about 2-3 minutes to let the wine cook reduce slightly, add mussels.
Pop on lid and watch.
Once the mussels open - immediately pick these and set aside. Discard any that don't open.
Or if you want to cook classically French, leave the tomatoes out and add some cream and parsley instead
